Fruity Bread Pudding

This is a great variation on the traditional bread pudding. Every bite gives you a surprising little fruity bite of fruit and the cottage cheese makes it nice and moist.
Ingredients -

1 Container 4% Cottage Cheese (16 oz)
1/4 Cup Sugar
1 Egg
1/2 Cup Golden Raisin and Dried Cherry Mix
1 Teaspoon Vanilla
1 Box Rectangular Melba Toast Boards
1 1/2 Cups Half and Half
3 Eggs
1 Teaspoons Vanilla
1/4 Teaspoons Cinnamon

 
Preparation:

1. Heat oven to 350 degrees.

2. Combine the cottage cheese, sugar, 1 egg, raisin and cherry mix and 1 teaspoon vanilla in a bowl.

3. In a greased 8 inch square baking dish arrange 8 pieces of Melba toast.

4. Over the toast spread 1 cup of the cottage cheese mixture.

5. With the remaining cottage cheese mixture top the 8 pieces of Melba toast.

6. Top with remaining Melba toast.

7. Whisk together half and half, 3 eggs, 1 teaspoon vanilla and cinnamon in a bowl.

8. Pour into dish, cover and chill 2 hours.

9. Sprinkle with coarse sugar if desired.

10. Bake 1 hour or until done.

Fruit Mixture
The golden raisin and dried cherry mixture can be substituted for any dried fruit combination that you like just make sure it has a semi moist fruit in it like the raisin (or that of some sort for moistness). You can have fun with it and play around.
