Healthy Apple Bread Pudding

What could be better that bread pudding that is actually good for you too? What a perfect idea! I love this one and I love feeding it to my family.
Ingredients -

8 to 9 Pieces of Your Favorite Bread
4 Tablespoons Butter
3 Golden Delicious Apples
2 Tablespoons Lemon Juice

1 Tablespoons Lemon Rind (grated)
1/4 To 1/2 Cup Honey
1 Teaspoon Cinnamon
1/4 Teaspoon Nutmeg
1 Cup Apple Juice
1/2 Golden Raisins
1/2 Cup Walnuts

 
Preparation:

1. Before toasting both sides of the bread under the broiler spread them with butter.

2. Cut them up into chunks.

3. Put the apples, lemon juice, lemon rind, honey, cinnamon, nutmeg, apple juice and raisins in the crock pot.

4. Do not put the walnuts in yet.

5. Taste the apples and see how tart they are. The amount of honey you put in should be determined by this.

6. Set the crock pot on low and allow to cook for 5 to 6 hours.

7. If you can stir halfway through cooking process.

8. Stir in the walnuts just before serving.

Walnuts
The walnuts in this recipe are optional and you can pick any nut you want. I’ve used almonds before and they are great. But remember almonds are not as hardy so don’t put them in as early. Throw them in right at the last minute and remember to use sliver almonds.

Lemon
If you don’t have a real lemon you can use lemon peel zest the spice but you need to kind of gage the taste when you put it in the mixture. There isn’t anything in the mixture that will make you sick by test tasting it so go on ahead and stick your finger in it and see how it tastes. Dried lemon zest is a lot stronger than fresh so you don’t want to put too much in.
