Peach And Croissant Bread Pudding

This is a great recipe with the rich flavor of rum and the silky flavor and texture of peaches. I really think you’ll enjoy it. The crispy croissants really add a nice different experience to a traditional bread pudding.
Ingredients -

2 Cups Peaches (chopped peeled)
2 Tablespoons Sugar + 1 1/4 Cups Sugar
1 Teaspoon Lemon Juice
3 Tablespoon Unsalted Butter
1/3 Cup Dark Rum
1 Teaspoon Vanilla
4 Large Eggs
1/2 Teaspoon Salt
4 Cups Whole Milk
6 Day Old Croissants (each cut horizontally in half)

 
Preparation:

1. Heat the oven to 375 degrees.

2. In a bowl toss together the peaches with 2 tablespoons of sugar and the lemon juice.

3. In a saucepan, melt 1 tablespoon of butter.

4. Use the butter to coat a shallow 3 quart baking dish.

5. Whisk together 3/4 cup sugar, rum, vanilla, eggs and salt in a bowl until it’s all combined.

6. Whisk in the milk.

7. Arrange half the croissant halves in the baking dish.

8. Pour half of the milk mixture over the croissants and firmly press the down.

9. Spoon half of the peaches on top.

10. Repeat layering one more time ending with the peaches.

11. Sprinkle the top with the remaining sugar.

12. Dot the top with the remaining butter.

13. Bake for 45 minutes or until they are done.

14. Serve them warm.

 



Cooking Tip
Croissants
If you don’t want to use croissants you can use biscuits. It totally changes the texture of the recipe but its super good. Just add 1/2 cup more mild and 1/3 cup more rum. More rum is yummy anyway…tee hee!

Peaches
If you don’t like peaches a perfect substitution is to substitute the peaches in the same amount with mangos. They have the same texture and they are amazing. They have a wonderful taste and they are perfect for people who don’t like peaches.
